Sweet potatoes and marshmallows in enamel cast iron cookware

This recipe for delicious sweet potatoes is the perfect side dish for any occasion, especially Thanksgiving.


  • 4 Large peeled, cooked and sliced sweet potatoes
  • 2/3 Cup of brown sugar
  • 2 Tbsp of real butter
  • Tsp of salt
  • Cup of water
  • Cup marshmallows

Preheat your enameled cast iron skillet on the stove top. Mix the water, brown sugar, salt and butter and then allow to simmer for 5 minutes. Add the sliced sweet potatoes and allow to simmer for 10 more minutes, turning the sweet potatoes frequently. Remove the enameled cast iron skillet from the heat and spread the marshmallows evenly over the top.

Corn Casserole in enamel cast iron

Another great side dish for any family gathering, Corn Casserole is always a hit.


  • 2 Cans cream corn
  • 2 Cans whole kernel corn – drained
  • 1 Stick real butter
  • 3 Tbsp sour cream
  • 1 Box Corn Bread Mix

Preheat oven to 350. Preheat enameled cast iron skillet and then melt real butter. Combine all ingredients in a large enameled cast iron casserole dish or enameled cast iron dutch oven and mix thoroughly. Place your enameled cast iron dutch oven or casserole dish in the oven and bake for 2 to 3 hours.

Pot Roast

Enameled cast iron dutch ovens are perfect for cooking your favorite Sunday meals, including a slow cooked pot roast that is sure to please.


  • 3 ½ to 4 Pound beef roast
  • 1 Large onion - chopped
  • 4 Large potatoes – chopped
  • 8oz Bag Baby Carrots
  • 2 Cup beef broth
  • 1 Tsp Salt
  • Pepper – to taste

Preheat oven to 250°. Combine all ingredients in an enameled cast iron dutch oven. Cover the enameled cast iron dutch oven and place in oven, allowing to cook for 5 – 6 hours or until the roast falls apart. Remove the enameled cast iron dutch oven using pot holders and use a knife and fork to tear the roast apart.
